BUTCHER PRODUCT LIST

Our meats are hormone, steroid, and antibiotic free at the time of harvest and come from independently owned farms where the animals are humanely raised. The animals are 100% grass fed or they are fed all natural non-animal by-product feeds.

ROSEDA FARMS

Roseda Farms 100% Black Angus Heritage Breed steers are pasture raised and offered corn silage and organic barley, both of which are grown on the farm in Monkton, Maryland. The animals roam freely on the 350 acre farm grazing on lush grass pastures and drinking from natural ponds. Roseda Farms is also practicing sustainable farming.

The steers are kosher harvested within a 20 mile distance from the farm, and the sides are hung to dry age naturally for a minimum of 21 days prior to sale to My Butcher and More.

My Butcher and More is proud to offer the Roseda Farms product. It was the very first local product to be offered by My Butcher and More shortly after opening in 2004. Over the past 7 years, we have built a strong relationship with Roseda Farms and have been able to rely on them to provide a consistent and steady supply of good quality, great tasting, local, dry aged beef.

USDA PRIME

My Butcher and More also offers a USDA Prime Black Angus Beef Never Ever Program. Our prime beef comes from an Arkansas City, Kansas cooperative of independently owned farms who raise 100% Black Angus steers according to the Creekstone Farms guidelines. The guidelines provide stringent standards to be followed which specifies the breed (100% Back Angus), humane harvesting, and feeding practices. They are never ever fed hormones and antibiotics.

The Creekstone Farms Prime Beef speaks for itself. I have over 25 years of experience in the business, and the Creekstone Farms Prime Beef is the finest tasting, most tender prime beef raised by the most animal health conscious farm in existence.

LAMB

Our fresh, local, whole dressed lambs are naturally raised on the grassy hills of the Shenandoah Valley, West Virginia where the animals roam freely in the pastures. The lambs are harvested in Baltimore, Maryland then shipped to My Butcher and More. We dry-age the lamb for 8 to 10 days and further process the whole lambs into chops, steaks, and roasts on premise at My Butcher and More.

PORK

We are also proud to offer local whole pigs from Woodsboro, Frederick County, Maryland. We purchase the pigs from a family owned and operated processing plant who send the whole BBQ pigs fully dressed and butterflied, if needed. We also purchase sides of hogs to further process into roasts and chops on premise at My Butcher & More. To optimize flavor and tenderness we also dry age all of our pork products on premise for 8 to 10 days.

These Tamarin pigs are free range animals offered a grain feed. In addition, the pigs are kept in natural settings on the farm where they are allowed to eat naturally occurring food from their surroundings.

VEAL

Finding a steady supply of local, cage-free veal calves which are fed from mother’s milk is no easy task. In this area, most calves are raised to adulthood for beef cattle. Saint Brigid’s Farm on Maryland’s Eastern Shore raises 100% Jersey cattle and sends us whole cage-free, milk-fed calves after dry aging them for 14 to 21 days. We further process the calves on premises.

At My Butcher and More we strove to offer locally raised products when available. Some of our veal supply comes from Catelli Brothers, a family owned and operated slaughterhouse in New Jersey.

CHICKEN

Like veal, sourcing a consistent and steady flow of chicken from one local source has it’s ups and downs. When available we purchase our chicken from local farmers who practice human, all natural, cage-free farming. We have the most difficulty obtaining locally raised chicken in the winter months when we offer Organic Everly Farms whole chickens and boneless, skinless chicken breasts.

SEAFOOD

At My Butcher and More we offer hand-made lump crab cakes, crab stuffed jumbo shrimp, crab stuffed button mushrooms, cold water lobster tails, and our fresh catch of the week.

SAUSAGE

Our freshly made pork, beef, turkey, lamb, and chicken sausages are made on premise. If you have a special recipe, let us know, and we will make it for you. We also offer a selection of German sausages and smoked meats from a local supplier.

IN STOCK GAME

For he more adventurous eaters, My Butcher and More also offer bison, duck, and rabbit as regularly in-stock items.

SPECIAL ORDER ITEMS

Kurobuta (Berkshire) Pork, and Farm-Raised Game Meats are a truly special dining experience and must be special ordered. 3 to 10 days advance notice may be required. Please call us.

Because of the unfair treatment to Japanese Kobe Beef we have made it policy to not offer this product at My Butcher and More. We can however special order Australian Wagyu Beef which is free range cattle raised and harvested humanely. Kobe is the area in Japan where the “Wagyu” cattle initially originated from. Wagyu is the breed name.

My Butcher and More is famous for fresh, handcrafted Turduckens, a very popular holiday item. We craft these poultry masterpieces to order, and they must be ordered in advance. Be prepared to a choose between maple sausage stuffing and stuffing laced with dried seasonal fruit.
